Dexter Russell Sani-Safe 8" Fillet Knife 10213 S133-8

Fillet knives are designed to be thin and flexible giving you great control and precision.  Often used with fish, these knives are capable of lying between the skin and top layer of meat to provide a nice clean cut. Their blades have engineered flex points that spring back to its shape. They will glide right through the meat and hold a very sharp edge, hardly needing to be re-sharpened.  When the knives need to be re-sharpened they will sharpen to the same sharpness as they were before thanks to the DEXSTEEL they were created with.  Fillet and boning knives have similar uses except that a fillet knife is much longer and thinner allowing for easier work when dealing with fine and thin cuts.

    Dexter has been the best all around knife for filleting fish. The narrow blade is flexible enough to make precise cuts and reduce waste when filleting. The steel always stays nice and sharp too.

    Excellent Knife and Scabbard

    I used a friends Dexter-Russel 8" fillet knife while surf fishing. It was great. The blade was sharp and stayed sharp. The grip was comfortable, easy to handle and felt secure in my hand even when wet. Cleans up easily and will look good for years. Very pleased with the knife. -- The scabbard has a heavy canvas belt loop. This is far superior to the fixed plastic loops that don't have flexibility when you bend or move.
